What is an email server?
It's like a postoffice. It holds the mail until it's delivered to you, or it accepts mail from you and ships it off to the recipient's server.
Generally, mail is sent to an SMTP server. It decides who gets the mail and initiates the delivery. Eventually it gets to the "last server" which is a POP server. The pop server waits until the recipient connects and it delivers the mail to her desktop.
